Budget Cooking

My favorite food blog has a post on Budget Cooking. Very useful in the UK where food is crazy expensive. I have definitely been eating more carbs and less meat. I admit to have spent a fair amount of money on spices and things, BUT it is an upfront expense that pays huge dividends. Once a spice is bought it can stretch the flavor of less interesting things into a whole meal. For example, adding oregano and tomato paste to rice makes a huge difference in flavor. Or the oyster sauce and soy which makes broccoli with a meat a cohesive meal. Oh, and if you are on a tight budget try having a crohnic disease that limits your appetite every once in a while. It works wonders for the wallet.
Any suggestions for cheap but delicious meals?

I just had an incredibly tasty, incredibly cheap dinner, read your blog while I was eating it, and got all excited at your post. I think, even oceans away, we must be connected. I gently cooked minced garlic, anchovies and red pepper flakes in good olive oil; tossed in some fresh bread crumbs once the garlic was sweet; and stirred in some pasta. I topped it all with arugula I had in the fridge. The garlic caramelized and stuck to the pasta and it was delicious...

Kale or chard, sauteed with garlic and oil. Throw in diced tofu pre-broiled in something tasty (my sister broils 15 min/side in soy and chili oil) and top with a little Thai peanut sauce.

As a grad student, this is my "ramen".
