Scotch pancakes

I had these lovely treats at the Farmer's market two weeks ago and I will be having two more on Saturday. Turns out they are quite easy to make. So if you feel like tasting a bit of what I am tasting make some scotch pancakes, slather with some fresh butter, and enjoy!

Wow. Pancake and scone in one! I've often though about soaking stale scones in milk and putting the resulting goo through a waffle iron, but it sounds a bit too gross to try.

Scones in a waffle iron. Hmm, an egg might be necessary to keep the end product cohesive. I might try instead pulsing the stale scones in the food processor, adding butter, and making a pie crust in the graham cracker style. Better yet, eat them scones while they're fresh!

MMM! Looks yummy. We had a Squash September potluck at work yesterday... mmmm, so many yummy squash recipe. The hit was a butter-nut couscous salad with cherries and citrus. Yum.

I want, but I don't know what caster sugar is. Or self-rising flour.

Karen, caster sugar is superfine sugar and self-rising flour has the baking powder in it and is really common in southern cooking. You should be able to find both at the grocery store.
